Comply with the City of Austin's FOG ordinance and grease trap program administered by Austin Water

Steps

1. Confirm applicability under Austin City Code Chapter 15-10 (the City's FOG/pretreatment ordinance) administered by Austin Water
2. Before purchasing any grease trap/interceptor, obtain Industrial Waste plan approval from Austin Water specifying the required size and design — purchasing equipment before this approval risks having to replace a non-compliant unit
3. Confirm minimum sizing: commercial food-prep facilities using a dishwasher are required to install at least a 500-gallon (liquid holding capacity) interceptor, per Austin Water's published design criteria
4. Have the grease trap fully emptied and cleaned at least once every three months by a hauler holding a valid City of Austin Liquid Waste Hauler (LWH) permit — only an LWH-permitted hauler may remove and transport grease trap waste under the ordinance
5. Monitor discharge against Austin Water's numeric FOG discharge limit for wastewater (published at 200 mg/L) and maintain compliance sampling records as required
6. Retain grease trap waste manifest/trip-ticket records on-site and make them available for the ordinance's specified look-back period (per Austin City Code §15-10-165(B), records must be available covering up to the past three years the facility has operated) during an inspection
