Create a Railway API token with write access to the affected project
POST to https://backboard.railway.com/graphql/v2
Run `mutation variableDelete($input: VariableDeleteInput!) { variableDelete(input: $input) }`
Set input to { projectId, environmentId, serviceId, name: "OLD_VARIABLE" } — name is the variable key to remove
Confirm the variable is gone with the variables query afterwards

Known gotchas

variableDelete requires the exact variable name; it is not a partial or wildcard match
serviceId is required here even for shared-looking variables — target the owning service
There is no undelete; removing a variable a service depends on can break deploys, so snapshot values first
Deleting a variable may trigger a redeploy of affected services
