Steps

1. Confirm the recirculating hood is listed as a complete system (appliances, filters, blower, and fire extinguishing equipment) by a recognized testing laboratory to UL 710B and that no field modification has been made that would violate the listing
2. Confirm only gas or electric appliances are used under a recirculating hood, and that gas combustion flue outlets are not directly connected to the recirculating airstream (maintaining the required clearance from the flue outlet to the filtered inlet)
3. Verify all closure panels, grease/odor filter components, and (where used) electrostatic precipitators have functioning interlocks so the cooking appliance cannot operate if a panel is open, a filter is missing, or airflow drops below the listed minimum
4. Follow the maintenance cadence associated with these systems: clean or replace filters per manufacturer instructions, clean electrostatic precipitators on a frequent (commonly weekly) basis, clean the entire hood section and blower on a periodic (commonly quarterly) basis, and test/inspect the full system roughly twice yearly
5. Maintain a signed and dated maintenance log on premises documenting each of these service events
