Structure menu items and condiments, including default and prefixed modifiers, in a Simphony STS Gen2 check payload

Steps
Add each ordered item as a CheckMenuItem with menuItemId, definitionSequence, quantity, and unitPrice
Nest a condiments array of CheckCondimentItem objects under each menu item, each requiring condimentId and definitionSequence
Send Simphony-Features: enable-condiment-prefix and include a prefixes array on the condiment item if prefixed modifiers are required
Do not filter out condiments flagged isDefault or atDefaultSetting in the response — these were auto-attached by Simphony based on the item's configured default-count option bit and remain part of the priced check
Keep referenceText at or under roughly 20 characters, and set seat only at the comboMeal level, since seat on nested combo/main/side items is ignored (forced to 0)
Known gotchas
Default condiments still appear in the response array and must be handled via isDefault/atDefaultSetting flags rather than assumed absent
Condiment prefixes only apply when the enable-condiment-prefix feature header is sent on a deployment running STS Gen2 1.7.1 or later
seat assignment on nested combo/main/side items is silently ignored by the API — set it at the comboMeal level instead
