Steps
Identify whether delivery, pickup, and any holiday/seasonal catering flow need different ordering schedules, menus, minimums, or fees
Create a separate Order Type for each distinct flow (e.g., standard delivery, standard pickup, Thanksgiving)
Set each Order Type's own event-times schedule controlling what dates/times clients can choose
Attach the correct menu, minimum order amount, and lead-time/admin-and-service-fee policy to each Order Type
If offering pickup from multiple locations, configure multiple pickup locations under the pickup Order Type
Known gotchas
Order Types are the mechanism for any variation in schedule, menu, minimums, or fees - trying to handle delivery vs. pickup differences within a single Order Type will not work as expected
Holiday-specific policies (e.g., Thanksgiving) need their own Order Type rather than being layered onto an existing one
